The brewing process

Mashing
Having charged the hot liquor tank a day prior, the mash comprises mixing malted grains, mainly barley or oats, with hot water in the mash tun. At this stage the conversion of starch into mainly maltose takes place, creating a ‘porridge’ from which will be extracted the sugars. All the resulting wort mixture is transferred to the wort boiler for the boiling stage.
